The Managing Director of our pizza delivery shop in Rapperswil, Antonio ‘Toni’ Maiorano, tossed his first pizza at our parent company, dieci al lago, where he learnt from our founder, Rocco Delli Colli: a good pizza should bear the signature of an experienced pizzaiolo. The dough must be left to rest, the peeled tomatoes must be harvested when they are ripe and the mozzarella should blend with the tomato sauce. Authentic, high-quality ingredients, combined with the skill of the pizzaiolo, are what make a good pizza. And the hot, crispy pizza should then be transported to the pizza enthusiast as quickly as possible in one of our delivery vehicles which are kitted out with mobile ovens.
