The olive is to pizza what the cherry is to cream topping. It is that certain something, providing the special flavour that rounds it off. This is why we take particular care when selecting this fruit.

 

That’s right – fruit! The olive is a stone fruit and proves that fruit is not always sweet, but also tart, smoky and slightly nutty. Just like our new variety with the melodious name of “Leccino”.

Ideal conditions for best quality

The Leccino olive tree grows in Abruzzo. It absorbs the mild climate between mountains of 3,000 metres and the 130-kilometre-long Adriatic coast through its roots and leaves. A third of Abruzzo is under nature protection, providing the best conditions for proud olive groves to develop superbly.

How does the olive find its way to the pizza?

Our supplier Pitturi is already in its second generation of dedication to growing the fine Leccino olive. The ripe fruits are shaken from the trees with great force, caught in nets, carefully sorted and placed in brine. There are no chemical additives and all this is carried out manually. “Scusi” then, if there is occasionally a stone left in the olive. Thanks to the careful quality control procedures, this happens at most once in 10,000 fruits. If you should find one, please contact us in any case!

Small but wahay!

So, there is no reason not to enjoy olives. Mainly because they are really healthy power packs with many vital substances and antioxidants. It is not without reason that they even come state-recommended in Spain!
